the harvest the grapes are laid out in wooden crates
to dry for 4 months, after which they are pressed. The
fermentation takes place in stainless steel tanks and
lasts for up to 6 weeks, though the sugar is so concentrated
that the wine
is unable to ferment out completely and remains naturally
sweet |
