Cashmere

  Made from raisined (‘passito’) grapes, mainly Gewürztraminer and a lesser amount of Sauvignon;
93 points in the Wine Spectator

Grape varieties: Gewürztraminer and Sauvignon

Description: Colour: Bright, golden yellow
Nose: Enormous concentration of fruit, reminiscent of dried apricot with a hint of caramel
and oranges
Flavour: Opulent and concentrated, the delicious sweetness cut by firm acidity

Winemaking and maturation:   After the harvest the grapes are laid out in wooden crates to dry for 4 months, after which they are pressed. The fermentation takes place in stainless steel tanks and lasts for up to 6 weeks, though the sugar is so concentrated that the wine
is unable to ferment out completely and remains naturally sweet

Total acidity: 7.8 g/l
Residual sugar: 150 g/l

Serve Goes well with :
